How was everyone’s Thanksgiving? Hopefully just as satisfyingly filling as ours, if not more.

After hours spent in the kitchen peering into the oven as our turkey, Emily, got herself a nice tan, the rest of the day and most of the evening was spent with good food and better company. Now that the baking/cooking frenzy is over (…for now at least) it’s time to kick back and relax until the last few holidays of the year nab us up again.

Or not. The end of the school term may not allow that, but keep it up everyone! There’s just a few more weeks left. =)

Eating healthy while on a busy schedule can be difficult, but these zucchini fritters are relatively quick to make and pretty filling as well.

Zucchinis are another vibrantly beautiful and delicious fall vegetable, and I absolutely love them. Whether I’m eating them fresh with a bit of dip on the side, or just slightly grilled with a pinch of salt and pepper, zucchini are great for munching on or served as a dish of its own.

But for those of you who aren’t huge fans of vegetables in general, perhaps these zucchini fritters will open a new door for you.

After spotting this recipe on Smitten Kitchen, I knew that I had to try them. While bit on the heavier side due to being pan fried, the first bite had my tastebuds singing and demanding more. They’re remarkably light and fluffy and will be disappearing off its plate before you know it. 

Ingredients:

  • 2-3 medium zucchini
  • 3-4 scallion
  • 1 large egg
  • 1/2 tsp sea salt or Kosher salt
  • pepper
  • 1/2 cup flour
  • 1/2 tsp baking powder

 

 

But wait a minute! The title of this post is “Zucchini Fritters & Homemade Cheesecloth“! Where’s the homemade cheesecloth?

So, I’ve found that store bought cheesecloth has a tendency to stretch easily. Eventually, they’re no longer usable since it’s been stretched to the point where more of the ingredients that I’m trying to squeeze are falling out than staying inside the cloth itself. As an alternative, I went and raided my dad’s drawers and pulled out one of his cotton undershirts.

After sanitizing it in the washing machine (with an extra precaution of bleach…ahem) I simply snipped off the top third of the shirt -right under the sleeves. This left me with the bottom of the shirt, which I cut along the sides and the end result is two squares of cotton. Which worked perfectly as a cheesecloth replacement! 

If you’re ever in need of cheesecloth and can’t find any at the supermarket, or just aren’t happy with the quality of cheap store bought brands, an unwanted or old cotton shirt works perfectly. Just cut it down to size and you’re good to go.

P.S. My dad has enough clean undershirts to last him a month or so, but just in case he missed the one I took, I decided to leave him with the top third of his shirt that was left. It can still be worn! The sleeves are still intact!

    These fritters do inspire. I buy zucchini all the time, but have never prepared them like this. I will need to change that and soon! Yours look so toasty and delicious.
    Creative use of old t-shirts and a lot less expensive than buying cheesecloth all the time-I will definitely put this tip to good use!
